Does a gas oven belong in this band?
Only for its thermostat. A Viking gas oven heats with a burner, not an element (the 5 Series gas range bakes with a hidden burner). A gas oven that stays cold has its own causes, from the part that lights the burner to the valve feeding it, quoted after the diagnosis.
Where is the thermostat?
On older freestanding gas ranges, Viking’s service manual places it behind the control panel, its sensing bulb clipped to the oven’s back wall. Ovens with electronic controls read a sensor probe instead. Neither is an owner job.
